They\u00a0are\u00a0perfect in\u00a0preserves, fantastic in desserts or cakes, but my favourite option is simply eating them raw.\u00a0As much as I love red currants,\u00a0I would have never tried adding\u00a0them fresh to\u00a0a savoury dish, if it wasn&#8217;t for <a href=\"http:\/\/www.amazon.co.uk\/Hughs-Three-Good-Things-Fearnley-Whittingstall\/dp\/1408828588\/ref=sr_1_1?s=books&amp;ie=UTF8&amp;qid=1407326256&amp;sr=1-1&amp;keywords=three+good+things\" target=\"_blank\">Hugh&#8217;s Three Good Things<\/a>\u00a0where I discovered\u00a0this slightly surprising\u00a0rocket\/arugula salad.<\/p>\n<p style=\"text-align: justify;\">As I have already mentioned <a href=\"http:\/\/www.withaglass.com\/?p=16015\" target=\"_blank\">here<\/a>, Hugh Fearnley Whittingstall&#8217;s book\u00a0contains\u00a0recipes calling each for only three main ingredients (plus seasoning). The ideas seem at first\u00a0simple, but they are actually very\u00a0creative and inspiring, often with small changes that make all the difference, such as putting red currants into a salad. These tangy berries were\u00a0so perfect with rocket and chicken, now their presence feels as obvious and justified as, say, adding olives. Not to mention\u00a0a\u00a0pleasantly\u00a0refreshing and original touch they make in this rather\u00a0ordinary\u00a0salad. Now I have one\u00a0more reason to wait for red currants\u00a0all year long!<\/p>\n<p>I have slightly modified the\u00a0original recipe, mainly mixing rocket with\u00a0some other salad leaves. For the original recipe and other fantastic ideas, check <a href=\"http:\/\/www.amazon.co.uk\/Hughs-Three-Good-Things-Fearnley-Whittingstall\/dp\/1408828588\/ref=sr_1_1?s=books&amp;ie=UTF8&amp;qid=1407326256&amp;sr=1-1&amp;keywords=three+good+things\" target=\"_blank\">Hugh&#8217;s Three Good Things<\/a>.<\/p>\n<p>TIP: White currants could be substituted here, but\u00a0I&#8217;m not sure about black currants&#8230;.<\/p>\n<p>The amount\u00a0of red currants depends on their sweetness and your own preferences\u00a0(even when very ripe,\u00a0they are always rather tangy).<\/p>\n<p><em>Preparation: 10 minutes<\/em><\/p>\n<p><em>Ingredients:<\/em><\/p>\n<p><em>leftover boiled, grilled or roast chicken, cut into slices or bite-sized pieces<\/em><\/p>\n<p><em>rocket (or a mixture of rocket and other salad leaves)<\/em><\/p>\n<p><em>red currants (berries only)<\/em><\/p>\n<p><em>vinaigrette (I prefer here the simplest one: olive oil, wine vinegar, salt\u00a0and\u00a0pepper)<\/em><\/p>\n<p>Place the salad ingredients into a bowl or on a plate.<\/p>\n<p>Sprinkle with the vinaigrette and serve.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>With their unique sharp\u00a0flavours, red currants count\u00a0for me among the biggest stars of the summer.
