First of all, those of you who have never seen (or forgotten) <a href=\"http:\/\/pingspickings.blogspot.ch\/2012\/03\/easy-as-coconut-pie.html\" target=\"_blank\">Ping&#8217;s Coconut Cake<\/a>, must absolutely try it. This effortless cake is one of the most unusual sweet treats I have ever tasted. The first time I baked it, I did it two days in a row, so you can imagine how good it was&#8230; Since then\u00a0I have prepared it <a href=\"http:\/\/www.withaglass.com\/?p=9520\">(my version is slightly modified)<\/a> at least dozen times and never got tired of it. Here is a quick reminder of what my modified version looks like:<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/www.withaglass.com\/?p=9520\"><img loading=\"lazy\" class=\"aligncenter  wp-image-9533\" title=\"cococakep\" alt=\"\" src=\"http:\/\/www.withaglass.com\/wp-content\/uploads\/2012\/03\/cococakep1.png\" width=\"344\" height=\"258\" srcset=\"http:\/\/www.withaglass.com\/wp-content\/uploads\/2012\/03\/cococakep1.png 430w, http:\/\/www.withaglass.com\/wp-content\/uploads\/2012\/03\/cococakep1-420x315.png 420w\" sizes=\"(max-width: 344px) 100vw, 344px\" \/><\/a><\/p>\n<p>I must emphasize here that this chocolate recipe is not an improvement because the original cake is perfect unchanged. It is simply a slightly different version, specially designed for chocolate addicts. As one of them, I have a habit of adding chocolate to various desserts, guided by the thought that one cannot have too many chocolate recipes. This cake could be considered as an alternative to the cooling\u00a0<a href=\"http:\/\/www.withaglass.com\/?p=9874\">Light Chocolate and Coconut Cream<\/a>\u00a0but maybe more suited for cold seasons that we are approaching, when richer desserts are welcome.<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/www.withaglass.com\/?p=9874\"><img loading=\"lazy\" class=\"aligncenter  wp-image-9875\" title=\"chocococo2p\" alt=\"\" src=\"http:\/\/www.withaglass.com\/wp-content\/uploads\/2012\/04\/chocococo2p.png\" width=\"344\" height=\"258\" srcset=\"http:\/\/www.withaglass.com\/wp-content\/uploads\/2012\/04\/chocococo2p.png 430w, http:\/\/www.withaglass.com\/wp-content\/uploads\/2012\/04\/chocococo2p-420x315.png 420w\" sizes=\"(max-width: 344px) 100vw, 344px\" \/><\/a><\/p>\n<p style=\"text-align: justify;\">Here once more the mixture of chocolate and coconut hasn&#8217;t let me down. Just like its pure coconut version, this cake was moist and closer to a custard or pudding than to a floury cake. Thanks to the dark chocolate it was obviously richer and slightly heavier. I think that this richer version of Ping&#8217;s cake will keep me company throughout the hated cold autumn and winter evenings. Thank you so much, Ping, for one more inspiration. I will have a big slice of this cake as a toast to your health, wishing you a prompt recovery and a quick solution of the recent problem!<\/p>\n<p style=\"text-align: justify;\">Click <a href=\"http:\/\/pingspickings.blogspot.ch\/2012\/03\/easy-as-coconut-pie.html\" target=\"_blank\">here to see Ping&#8217;s original Coconut Cake<\/a> or\u00a0<a href=\"http:\/\/pingspickings.blogspot.ch\/2012\/03\/revamped-coconut-banana-pudding-pie.html\" target=\"_blank\">here to see her banana version<\/a>.<\/p>\n<p style=\"text-align: justify;\">TIPS: Like Ping, I like moderately sweet desserts, but if you have a very sweet tooth, add 50% more sugar.<\/p>\n<p style=\"text-align: justify;\">This cake improves after a night spent in the fridge and tastes definitely better when served very cold.<\/p>\n<p><em>Preparation: 1 hour (+ not obligatory, but strongly advised one night in the fridge)<\/em><\/p>\n<p><em>Ingredients (10 x 20 cm baking tin):<\/em><\/p>\n<p><em>3 heaped tablespoons (about 1\/4 cup) flour<\/em><\/p>\n<p><em>100 g (1\/2 cup) sugar<\/em><\/p>\n<p><em>70 g (1 cup) desiccated coconut (+ some more to sprinkle over the cake)<\/em><\/p>\n<p><em>2 eggs<\/em><\/p>\n<p><em>60 g melted butter<\/em><\/p>\n<p><em>100 g (about 3,4 oz) bitter, dark chocolate (min. 70% cocoa)<\/em><\/p>\n<p><em>pinch of salt<\/em><\/p>\n<p><em>125 ml (1\/2 cup) coconut milk<\/em><\/p>\n<p><em>125 ml (1\/2 cup) cow cream (liquid, not cr\u00e8me fra\u00eeche)<\/em><\/p>\n<p style=\"text-align: justify;\">Preheat the oven to 180\u00b0C.<\/p>\n<p style=\"text-align: justify;\">Melt the chocolate in the microwave (in several short stages to control the melting process and avoid overcooking) or in a hot water bath (putting a metal bowl over a pan with hot water and stirring the chocolate constantly) or simply in a pan at very low heat (this is my favourite method, but quite risky: if the chocolate is overheated it can no longer be used.<\/p>\n<p style=\"text-align: justify;\">Combine all the ingredients in a bowl.<\/p>\n<p style=\"text-align: justify;\">Grease a baking tin or line it with baking paper.<\/p>\n<p style=\"text-align: justify;\">Pour the batter into the tin and bake for about 40-50 minutes.<\/p>\n<p style=\"text-align: justify;\">The cake can be sprinkled with desiccated coconut before serving.<\/p>\n<p style=\"text-align: justify;\">It can be served as soon as it cools down, but is definitely best refrigerated overnight.<\/p>\n<div><\/div>\n","protected":false},"excerpt":{"rendered":"<p>Ping (Ping&#8217;s Pickings) has recently had some difficult moments and since chocolate is a well known infallible mood improver, I thought I would try to&hellip;<\/p>\n","protected":false},"author":1,"featured_media":0,"comment_status":"open","ping_status":"closed","sticky":false,"template":"","format":"standard","meta":[],"categories":[203,7,132,55,6],"tags":[212],"_links":{"self":[{"href":"http:\/\/www.withaglass.com\/index.php?rest_route=\/wp\/v2\/posts\/11809"}],"collection":[{"href":"http:\/\/www.withaglass.com\/index.php?rest_route=\/wp\/v2\/posts"}],"about":[{"href":"http:\/\/www.withaglass.com\/index.php?rest_route=\/wp\/v2\/types\/post"}],"author":[{"embeddable":true,"href":"http:\/\/www.withaglass.com\/index.php?rest_route=\/wp\/v2\/users\/1"}],"replies":[{"embeddable":true,"href":"http:\/\/www.withaglass.com\/index.php?rest_route=%2Fwp%2Fv2%2Fcomments&post=11809"}],"version-history":[{"count":26,"href":"http:\/\/www.withaglass.com\/index.php?rest_route=\/wp\/v2\/posts\/11809\/revisions"}],"predecessor-version":[{"id":12750,"href":"http:\/\/www.withaglass.com\/index.php?rest_route=\/wp\/v2\/posts\/11809\/revisions\/12750"}],"wp:attachment":[{"href":"http:\/\/www.withaglass.com\/index.php?rest_route=%2Fwp%2Fv2%2Fmedia&parent=11809"}],"wp:term":[{"taxonomy":"category","embeddable":true,"href":"http:\/\/www.withaglass.com\/index.php?rest_route=%2Fwp%2Fv2%2Fcategories&post=11809"},{"taxonomy":"post_tag","embeddable":true,"href":"http:\/\/www.withaglass.com\/index.php?rest_route=%2Fwp%2Fv2%2Ftags&post=11809"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}
